Researchers at the National University of Singapore have made significant advancements in the field of 3D-printed vegan calamari rings. In 2023, they initially unveiled their early attempts, which tasted similar to real calamari but lacked the proper texture. However, after two years of trial and error, they have now perfected their recipe to match the real thing, even providing 5 percent more protein than actual squid.

The updated recipe still starts with a plant-based paste made from isolated mung bean protein and powdered microalgae. To improve the texture, the researchers added a precise mixture of extra ingredients, including 10 percent powdered microalgae, 1.5 percent gellan gum for thickening, and 2 percent canola oil for fat content.

Each calamari ring is 3D printed to be about 1.8 inches wide and then frozen overnight before being battered and deep-fried. Microscopic imaging revealed small structural voids inside the cooked paste, which contributed to its softness and better resemblance to actual seafood.

Lead author of the study, Poornima Vijayan, emphasized the potential of 3D printing to transform sustainable plant proteins into seafood analogs. The next step for the researchers is to scale up their production and convince consumers to give their vegan calamari a try.
