Denver’s Glo Noodle House Owners to Open New Sushi Restaurant in Boulder
Christopher and Ariana Teigland, the talented couple behind Denver’s popular Glo Noodle House, are expanding their culinary ventures to Boulder this spring with the launch of a new sushi eatery called Odd Rabbit. This “traditionally non-traditional” sushi restaurant is set to open at 5845 Arapahoe Ave., just a few blocks away from where the couple first met while working at Hosea Rosenberg’s Blackbelly Market & Restaurant.
Known for their Michelin Bib Gourmand-recognized ramen and creative Japanese-inspired cooking at Glo Noodle House, the Teiglands are excited to introduce a sushi-focused menu at the new 3,500-square-foot space in Boulder. The restaurant will feature seating for 90 inside, a 10-seat chef’s counter, and a 40-person patio space.
The menu at Odd Rabbit will showcase a variety of sushi options, including nigiri selections like hamachi, uni, and spicy tuna, as well as handrolls and specialty dishes such as salmon sashimi and tuna tataki. Chef Stephen Nguyen, who has previously worked at Denver’s Temaki Den and Uncle, will oversee the raw fish component.
In addition to sushi, Odd Rabbit will offer dishes that pay homage to Glo’s signature flavors, such as tori paitan ramen, duck mazemen, miso mussels, Szechuan fried snapper, braised pork shoulder, and Wagyu steak.
“Food has always been how I make sense of the world,” said Christopher Teigland. With Odd Rabbit, he aims to focus on simplicity and highlight the quality of ingredients. Ariana Teigland’s culinary expertise and beverage programming skills will be reflected in the thoughtfully curated sake list at the restaurant.
The Teiglands opened Glo Noodle House in Denver in 2022 and later expanded to Vail in 2025. However, they believe that Boulder is the perfect place to introduce their next culinary concept.
