As a result of this newfound popularity, the price of pistachio kernels has surged from $7.65 to $10.30 per pound, according to nut trader Giles Hacking. The increased demand for pistachios from chocolatiers like Lindt has led to a scarcity in supply, with some shops even limiting the number of bars customers can purchase. In response to the trend, Lindt and British supermarket Wm Morrison have introduced pistachio cream Easter eggs to meet consumer demand.

The shortage of pistachios can be attributed to a combination of factors, including a poor harvest in the US, the leading exporter of pistachios. Additionally, Iran, the world’s second-largest producer of pistachios, exported 40% more pistachios to the UAE in the first six months of 2025 compared to the previous year. This shortage marks a stark contrast to 2023 when an oversupply of pistachios led to a drop in prices.

In California, some farmers have transitioned from growing almonds to pistachios due to low almond prices, further exacerbating the pistachio shortage. Chocolatiers are struggling to keep up with the demand for pistachio chocolate, with some facing challenges in sourcing ingredients like kataifi, a shredded Middle Eastern pastry used in the cream filling.
