Gillian Swinton and her partner are living the “good life” on a 2.7ha lifestyle block in Central Otago, where they focus on growing and preserving their own food. Originally from Scotland, Gillian shares her journey to self-sufficiency in New Zealand with Fresh magazine.

Before moving to New Zealand, Gillian graduated with a BA in publishing from Edinburgh Napier University. Her decision to come to New Zealand was influenced by her mum’s friend, who painted a picture of a laid-back lifestyle in Hawke’s Bay. Growing up spending holidays on a farm in the Outer Hebrides, Gillian developed a love for simple and self-sufficient living. Moving to New Zealand exposed her to a more seasonal approach to food, which led her to embrace a more resourceful and frugal mindset.

Gillian’s grandmother, who was adept at looking after herself and feeding her household with limited supplies, inspired her to pursue a similar path. Learning to cook and preserve was a gradual process for Gillian, influenced by her partner’s cooking skills and her experiences working in various farm-related roles in Australia and New Zealand.

One of Gillian’s favorite recipes is power-cut nachos, cooked on the fireplace during winter. She also enjoys growing garlic on their property, finding it an easy crop to become self-sufficient in. Gillian recounts moments like unexpectedly inheriting alpacas and kune kune pigs when they bought their property as memorable challenges along their journey.

Through their experiences, Gillian and her partner have built a supportive community around them, which has been a significant win in their journey. Opening a farmside shop allowed them to share their produce and connect with like-minded individuals. Gillian emphasizes the importance of community and finding joy in the journey towards self-sufficiency.

In her rare moments of relaxation, Gillian enjoys reading, attending live music events, and traveling. She encourages others considering a similar journey to focus on building skills and community, regardless of property ownership.

Two of her recipes, honey marshmallows and preserved spiced honey apples, showcase her love for homemade, natural ingredients. Another recipe, slow cooker green tomato, apple, and lamb curry, demonstrates her creative use of seasonal produce in delicious meals.
