Bovina, a charming small town in Upstate New York’s Delaware County, is a place where time seems to stand still. Nestled behind the Catskill Mountains, this idyllic setting is a postcard-perfect scene of rolling hills, grazing cows, and quaint farmstands. With a population of only around 600 people, Bovina is a place where cows outnumber humans, as Elizabeth Stark of Bovina Farm & Fermentory likes to point out.
Despite its old-world charm, Bovina Farm & Fermentory is a relatively new addition to the town’s landscape, having been built in 2020 by owners Elizabeth Stark and Jacob Sackett. The couple, who also double as chefs, servers, gardeners, brewers, and builders, constructed the house themselves with the help of family and local barn builders. The result is a beautifully weathered structure that blends seamlessly into the rural surroundings.
Inspired by old taverns they encountered in the Czech countryside while studying abroad, Stark and Sackett host a weekly dinner-party style restaurant on Saturdays at Bovina Farm & Fermentory. Guests are treated to hearty, seasonal dishes cooked by Sackett, handwritten menus, and house-brewed beer. It’s a unique experience that fosters community and engagement around the dinner table, bringing a touch of warmth and conviviality to this rural setting.
This summer, Bovina Farm & Fermentory is expanding its offerings with accommodations above the restaurant. The rooms are simple yet stylish, featuring Shaker-inspired furniture and hand-printed wall detailing. The addition of lodging was a natural progression for the couple, as many guests who dined at the restaurant inquired about nearby places to stay. Now, visitors can enjoy a full package deal by booking a room above the restaurant or opting for the solitude of the freestanding cottage down the hill.
Bovina Farm & Fermentory is just one of several hospitality experiences that have helped put Bovina and neighboring Delaware County towns on the map. With a growing reputation for culinary excellence and a laid-back alternative to city life, these towns are drawing weekend visitors seeking a taste of rural charm and authentic farm-to-table dining experiences. Whether you’re looking to escape the hustle and bustle of city life or simply savor the simple pleasures of country living, Bovina and its surrounding towns offer a welcoming retreat in the heart of Upstate New York.
