The study compared gluten-free products with their gluten-containing counterparts and found that gluten-free options typically provide less protein and more sugar and calories. Manufacturers are exploring alternatives like pseudo-cereals and hydrocolloids to improve the nutritional profile of gluten-free products.

While a gluten-free diet is essential for individuals with celiac disease or wheat allergies, many people adopt this diet for perceived health benefits or as a trend. The global gluten-free product market is growing rapidly, with the US market estimated to be valued at $5.9 billion.
