Why Washing Raw Chicken is Unnecessary and Unsafe
Many people believe that washing raw chicken is a necessary step to ensure cleanliness and safety in the kitchen. However, recent studies have shown that this practice is not only unnecessary but can also be dangerous.
It is important to note that chicken purchased from the grocery store is already washed and ready to cook. Washing it again at home does little to eliminate pathogens and may actually spread harmful microbes.
Expert Warnings Against Washing Raw Chicken
Julian Cox, deputy chair of Australia’s Food Safety Information Council, warns against washing raw chicken before cooking. He emphasizes that this practice can spread bacteria throughout the kitchen, increasing the risk of foodborne illness.
Similarly, a survey conducted in the US found that 73 percent of respondents washed their raw poultry, with only 30 percent aware that this practice is inadvisable. This lack of education on the topic is concerning, as it puts people at risk of foodborne illnesses.
The Dangers of Washing Raw Chicken
Each year in the US, there are an estimated 47.8 million cases of foodborne illness, with raw poultry being a common culprit. While washing chicken may not directly cause illness, it does raise the risk of contamination.
A study by the United States Department of Agriculture (USDA) found that 26 percent of participants who washed raw chicken transferred bacteria to their salad when they later used the same sink to wash their greens.
Safe Cooking Practices
To protect yourself from harmful bacteria like Salmonella and E. coli in the kitchen, the USDA advises against washing raw meat. Instead, use a dedicated chopping board for raw meat, wash your hands thoroughly after handling raw meat, and use a food thermometer to ensure chicken is cooked to a safe temperature of at least 74°C (165°F).
These guidelines also apply to raw turkey, especially during Thanksgiving. By following safe cooking practices and avoiding the unnecessary washing of raw chicken, you can enjoy a safe and healthy meal.
