Unlocking the Nutritional Benefits of Banana Peels in Baked Goods

When you think of a banana, the first thing that comes to mind is likely the sweet, creamy fruit inside. But what if I told you that the often-overlooked peel could also be a delicious and nutritious addition to your baking repertoire? A recent study published in 2022 has shed light on the potential of banana peels to be transformed into a versatile flour that can elevate the taste and health benefits of your favorite baked goods.

Traditionally, banana peels have been discarded as waste. However, researchers found that by blanching, drying, and grinding banana peels into a flour, they could be used to create baked treats that rival traditional wheat-based products in flavor and nutritional value.

According to the study, baked goods made with banana peel flour not only taste great but also offer a host of health benefits. Enriched with minerals, fiber, magnesium, potassium, and antioxidant compounds, these treats provide a nutritious alternative to conventional baked goods.

During taste tests, consumers reported that they were just as satisfied with the flavors of banana peel-enriched cookies as they were with regular sugar cookies. However, it is important to note that using too much banana peel flour can result in cookies that are overly dense and brown. To achieve the perfect balance, the study recommended using flour containing around 7.5 percent banana peel.

Not only do baked goods made with banana peel flour taste delicious, but they also have a longer shelf life. The study found that these treats remained fresh for up to three months when stored at room temperature.

While the study focused on the use of banana peels in cookies, the results suggest that incorporating banana peel flour into other baked goods such as breads, cakes, and pasta could offer similar benefits. Previous studies have shown that banana peel flour can enhance the nutritional profile of baked products, providing higher protein, carbohydrate, and fat contents.

If baking isn’t your forte, there are other creative ways to incorporate banana peels into your cooking. Celebrity chef Nigella Lawson has used banana peels in curry dishes, while vegan bloggers have popularized recipes for banana peel bacon and pulled peel ‘pork’.

Not only does eating banana peels offer a healthy option, but it also helps reduce food waste. With around 40 percent of a banana’s weight contained in its peel, utilizing this often-discarded skin can contribute to sustainable eating habits.

Furthermore, the antioxidant and antimicrobial properties of banana peels can potentially extend the shelf life of baked goods, making them a valuable ingredient in the kitchen. Similar benefits have been observed with other fruit peels, such as mango skin, which has been found to enhance the antioxidant properties and flavor of baked goods.

So, the next time you reach for a banana, consider saving the peel for a culinary adventure. Your taste buds and your health will thank you for it.
