The study compared gluten-free products with their gluten-containing counterparts and found that gluten-free options typically provide less protein and more sugar and calories. This challenges the perceived benefits of gluten-free products, such as weight control and diabetes management, which may be exaggerated.

One of the key concerns highlighted in the study is the lack of essential nutrients in many gluten-free products. Manufacturers are exploring alternatives like pseudo-cereals and hydrocolloids to improve the nutritional profile of gluten-free products.

While a gluten-free diet is essential for individuals with celiac disease or wheat allergies, many people adopt this diet for perceived health benefits or as a trend. The global gluten-free product market is growing rapidly, with the US market estimated to be valued at $5.9 billion.
