Food microbiologists have determined these temperature thresholds based on the fact that raw foods can harbor illness-causing microbes such as Salmonella, Escherichia coli, Campylobacter, Listeria, and Clostridium. These bacteria can multiply rapidly at temperatures between 40 to 140 degrees Fahrenheit, putting consumers at risk of food poisoning if the meat is not cooked properly.

To combat these harmful bacteria, it is crucial to cook meat to the recommended internal temperature. For example, chicken should be cooked to at least 165 degrees Fahrenheit, while steak or pork should reach 145 degrees Fahrenheit. Ground meat, such as burgers, requires a slightly higher temperature of 160 degrees Fahrenheit due to the way it is processed.

Over the years, these temperature guidelines have remained relatively consistent, with the exception of pork, which had its recommended temperature lowered from 160 degrees Fahrenheit to 145 degrees Fahrenheit in 2011. This change was made to reduce the prevalence of the nematode Trichinella spiralis in pigs, which can cause trichinosis if consumed in undercooked meat.

In addition to cooking meat to the proper temperature, there are other steps that can be taken to prevent foodborne illnesses. Using separate cutting boards and utensils for raw and cooked meat, washing hands between tasks, and avoiding leaving food out at room temperature are all important practices. It is also recommended to use a good meat thermometer to ensure that the meat is cooked thoroughly, especially in the thickest part.

By following these guidelines and cooking meat safely, consumers can enjoy delicious grilled meals without the risk of foodborne illnesses.
