As the no-alcohol category continues to grow, with a projected 7% increase by 2027 according to the IWSR, it comes as no surprise that established names like Fortnum & Mason and Berry Bros. & Rudd are also embracing this trend. These producers are tapping into the art of crafting sparkling teas that offer a sophisticated alternative to traditional alcoholic beverages.

At Copenhagen Sparkling Tea Company, founder Jonas Kocemba takes a meticulous approach to brewing his teas. He hand-brews each tea, carefully controlling temperatures and brewing times before blending them to create a complex and balanced flavor profile. Drawing from his background in the wine world, Kocemba focuses on elements like the attack, middle palate, and aftertaste to create a truly unique tasting experience.

On the other hand, Saicho, founded by Michelle Chiu, takes a cold brewing approach to extract the flavor components of their teas. Cold brewing allows for a longer extraction time, preventing astringency and allowing the flavors to fully develop. Chiu and her team source single-origin teas from tea gardens across China, India, and Japan, showcasing the unique terroir of each region in their sparkling teas.

When it comes to pairing sparkling tea with food, both Kocemba and Chiu emphasize its versatility. Sparkling tea can be enjoyed as an aperitif, paired with hors d’oeuvres, charcuterie, Asian flavors, sushi, shellfish, and even spicy dishes. Much like sparkling wine, sparkling tea adds a touch of elegance and sophistication to any dining experience.
