This new technology is part of a larger movement towards alternative meats that are challenging the traditional livestock industry. Bruce Friedrich, founder and president of the Good Food Institute, recently discussed the potential of this industry in his new book, “Meat: How the Next Agricultural Revolution Will Transform Humanity’s Favorite Food — and Our Future.”

Friedrich highlights the significant environmental costs of conventional meat production, citing a report from the U.N. Food and Agriculture Organization that found animal-product production to be responsible for a range of environmental harms, including deforestation, climate change, and water pollution. He emphasizes the inefficiency of producing animal products, which results in a high level of food waste and contributes to roughly 20% of climate emissions.

In response to these challenges, alternative meat companies are developing new technologies to create plant-based and cultivated meat products. Friedrich compares this shift to the transition to renewable energy or electric vehicles, noting that a variety of approaches will be needed to address the growing demand for meat. He argues that creating plant-based meat that is indistinguishable from animal-based meat and growing actual animal meat in factories are key solutions.

Despite some challenges, such as backlash against ultra-processed foods, Friedrich remains optimistic about the future of the alternative meat industry. He points out that plant-based meats are generally healthier than their animal-based counterparts, with less fat and more fiber and protein. He also suggests that collaboration between alternative meat companies and the traditional meat industry could lead to more efficient and profitable production methods.
